In a summer of salmonella scares and tomato trauma, chefs and their staffs are stepping up inspection of produce as it's delivered. The pineapples were fragrant, but not overly so. The mangoes were perfect for salsa: ripe yet still firm. And the cilantro -- wait a sec. Where was the cilantro?
