Most of us believe that cooking destroys vitamins in vegetables. But the issue is not as simple as it seems, and a close look at the data may lead you to conclude that if eating raw vegetables is an issue either with your children or your own palate, it may not be worth the battle.My first investigation into the matter was a venture into the data of the United States Department of Agriculture(USDA). Although vitamins A and C are both heat-sensitive, and the latter is also water soluble and prone to oxidation, cooked foods do indeed contain less of these essential vitamins.
